Our Story

The iconic recipes of Bill Johnson’s Big Apple have become staples of Arizona cuisine, evoking nostalgia in people from around the world. 


It all began in the 1930s with Gene Johnson, who pioneered the original recipes. By the 1940s, these dishes were proudly served at the Compton landmark, "Gene's Barbecue," where they gained the admiration of locals and Americans alike. Walt Disney, a close friend of Gene, invited her to open a restaurant in his upcoming amusement park, Disneyland—an offer she graciously declined. Instead, Gene chose to take her recipes to Arizona and serve them at a new establishment. 


In 1956, after relocating to Arizona, Bill Johnson and Gene Johnson opened the first Big Apple Restaurant. Over the next 60 years, her recipes would evolve into the renowned dishes beloved by many. 


Today, Rick Johnson and James Johnson are continuing the illustrious legacy with a commitment to honor and preserve the great heritage of Bill & Gene Johnson.
